Tutto Apposto Cucina Italiana is seeking a passionate, disciplined, and skilled Lead Line Cook / Pizza Chef to join our team. This is a dual-focus role: you will be the guardian of our dough program—crafting artisan breads and pizzas from scratch—while acting as a "player-coach" to lead and inspire our line staff during high-volume service.Key ResponsibilitiesArtisan Dough Management: Oversee the daily preparation of artisan bread and pizza dough, including hydration management, fermentation timing, and hand-stretching techniques.
Quality Control: Maintain the highest standards for ingredients and final presentation. If it’s not "Tutto Apposto," it doesn't leave the kitchen.
Team Mentorship: Train junior cooks on proper techniques, food safety, and efficiency.
Inventory & Prep: Assist in ordering supplies and managing prep lists to minimize waste and maximize freshness.
Experience: 2+ years in a professional kitchen with a strong focus on Italian cuisine and high-hydration doughs.
Technical Skill: Mastery of wood-fired or high-heat deck ovens and a deep understanding of yeast/sourdough fermentation.
Leadership: Proven ability to command a kitchen line under pressure while maintaining a positive, professional demeanor.
Reliability: A "first-in, last-out" mentality with a sharp eye for cleanliness and NYC health code compliance.
